Baking with Lucy: Super Festive Rocky Road Chunks | Blogmas Day 16

It wouldn't be Christmas without a little baking, so for Blogmas I thought it was only right that I created a super easy, yummy and festive bake for you all. I say bake, this recipe doesn't actually involve any actual baking, but rocky road is one of my favourite treats to make as it's so easy and you can get really creative with what you add in. Plus, I also wanted to kick off my 'Baking with Lucy' series as, don't get me wrong I'm no Mary Berry but, I have been getting more into baking these past few months.

To make this super festive rocky road you will need:

• 1 tray/dish
• Tin foil
• 1 glass jug/microwave friendly bowl
• 1 bowl to mix in
• 2 bars of white chocolate
• 1 bar of smarties festive share bar (or chocolate of your choice)
• 1 bag of mini marshmallows
• Ginger biscuits
• 1 box of mint matchmakers

How to:

1. Break up your white chocolate bars and put them in your jug, then pop that in the microwave using 30 second chunks stirring in between until your chocolate is fully melted. I found that about 1 minute 30 seconds did the trick.
2. Add in your treats! This part is really vague but I honestly didn't follow any amounts for this part, I just kind of poured in the mini marshmallows until I thought there was enough and then broke up the smarties bar, about half a box of matchmakers and about 5-6 ginger biscuits and added them in and give it all a big stir! As the white chocolate was still hot from being melted the chocolate from the match makers ended up melting in and changing the colour from white to light brown, but it actually worked out well as it made it extra minty!
3. Line your tray with tin foil and pour the mixture in, making sure to press it down so you don't get any gaps.
4. Leave to set in the fridge for about 2 hours.
5. Chop up into chunks and enjoy!

I'm so pleased with how my first 'bake' has gone and I hope you all make this festive rocky road for yourselves as it really is so easy yet delicious! And the perfect treat to make if you have friends coming over.
