What you will need:
- Chocolate cake mix (I used Betty Crocker Devil's Food cupcake mix) + suggested ingredients to add in.
- Icing sugar
- Butter
- 1 packet of mini creme eggs
- Yellow food colouring
- 2 large mixing bowls
- 1 regular bowl
- Electric whisk
- Cupcake cases (they come with the Betty Crocker cupcake mix)
So the first step is really easy and that's baking the actual cakes. The instructions on the Betty Crocker cake mixture are really simple and you only need to add eggs, vegetable oil and water so the mixture is made in minutes. Once the cakes are fully baked, leave them out to cool.
Once the cupcakes are fully cool then take a knife and cut out the middle (go down about half way through the cupcake), this is where our surprise creme egg creme centre is going. I've tried this recipe 2 ways; you can either scrape out the creme from creme eggs and put that in the centre, or you can make another version with icing which is what I did the second time. To make the centre yourself then simply make 2 sets of icing, leaving one white and dying the other part yellow, then put a dollop of each creamy goodness into the middle of all your cupcakes, making a cake version of a creme egg.
Then to finish off, whip up some chocolate buttercream icing. I used the mixture from the cake mix but you can also make some using cocoa powder and butter. Ice your cupcakes and then unwrap your mini creme eggs. Chop each one in half and place on top to decorate.
And it's as easy as that! A quick and easy bake for Easter that's super indulgent and full of creme egg goodness.
